This delicious quinoa salmon patty recipe is high in protein, low in calories, and simple to make. These salmon patties are perfect whether your goal is to lose weight, gain muscle, or just maintain.

When I started experimenting with these quinoa salmon patties, the texture was my biggest challenge. I’m so grateful to my client Lyndall who provided my test kitchen and made three versions before we felt and tasted perfection! We played around with the amount of quinoa, tested different herbs, experimented with natural binding ingredients until finally, we had achieved our goal of  light and delicious quinoa salmon patties the whole family will enjoy.

The key to putting this recipe together in such little time is to have the trio quinoa already prepared in your fridge.

Makes 6

Ingredients:

  • 1 cup x cooked trio quinoa
  • 170g x tinned boneless salmon
  • 2 x eggs
  • 1 x stem shallots chopped
  • 1/2 teaspoon x pepper
  • chives to flavour
  • parsley to flavour
  • tarragon to flavour
  • fish sauce optional
  • salt optional
  • 2 – 3 teaspoons x Waltanna Farms flaxseed oil

Instructions:

  1. In a large mixing bowl, gently combine trio quinoa, salmon, shallots, pepper, chives, parsley, tarragon and eggs. Divide evenly to form 6 patties.
  2. In a large non-stick pan, heat oil over medium heat. When oil is hot, place patties into pan and cook for about 5 minutes on each side, until golden brown. (While patties are cooking prepare your baby spinach and rocket salad if serving.)
  3. Take patties out of pan and place on a paper towel to cool and absorb any excess oil. Drizzle with flaxseed oil while still warm.
  4. Serve alongside a simple baby spinach and rocket salad dressed in fresh squeezed lemon and olive oil.

Enjoy as a main meal ‘outside the metabolic window’ of intense exercise. Add a high energy carb such as; buckwheat/wholemeal bread, or sweet potato mash if eating this dish ‘inside the metabolic window’.
